Scraps & Off-Cuts: May

A Tour Through France

Friend and local wine merchant Alex Percy of The Modest Merchant joined us this month for an exciting wine tour through France. To pair with these wines, our Head Chef Robbie designed some memorable dishes to create one very special evening.

The night began with introductions from Alex and Chef Robbie, detailing their thoughtful process in crafting their special French-inspired menu for the night. For the most part, wine led the way, as The Modest Merchant highlighted small, understated wineries, mostly organic using local grape varieties & low intervention wine making.

A whirlwind of food and drink commenced, starting with gorgeous plump La Spéciale de Claire oysters paired with a crisp Anjou Blanc from the Loire. A charming trio of canapés followed with Thalia Blanc from the Languedoc. Next, smoked gurnard, carrot râpées and zippy crème fraîche paired with Source Blanc from Mas des Infermières, Sir Ridley Scott’s own wine estate in the sunny Luberon. The main course was grand and buttery roast monkfish, pommes Anna, wild garlic broccoli, and a beautiful Escartefigue Rouge from the Rhone. Finally, a zesty but creamy house-made blood orange tart served alongside our own spin on a dessert wine cocktail – A Modest Cocktail.

We are delighted with the evening our team at Lyon’s and The Modest Merchant created together. It was an inspired ode to French cuisine and wine-making, but more, the symbiotic relationship between wine and food itself – a true hallmark of what we’re all about at Lyon’s. As such, please keep an eye out for more events like our Tour Through France in future.

Back to Back Oysters & Fizz Madness

We opened for two bonus bank holiday lunches this month, with a special on naked oysters and delicious Pet Nat fizz to boot. Oysters were certainly a hit, but folks were blown away by Crystal – a delicious 2022 Croatina Pet Nat fizz, made locally in Walthamstow by Renegade Winery with grapes from Lombardy, Italy. Crystal is naturally sparkling, a totally different process from a champagne or prosecco, making it quite unique. With gorgeous rhubarb and raspberry notes on the nose but a stunningly dry sip, it’s no wonder we’ve found ourselves opening bottle after bottle. Crystal is available by the bottle on our wine list – ask us about it next time you’re in for a real treat.

Up Next…

With summer just around the corner, we’re prepping for a gorgeous few months of fresh food, cold wine, and balmy weather. Stay tuned for new dishes and cocktails inspired by the season, as well as wine-centric events and more. We’re starting out with our Chef’s Special dish for Father’s Day lunch on Sunday, June 16th. Come join us for a celebratory family meal with good food and drink, and see what summer at Lyon’s is all about!

Surf N’ Turf Vibes…

…Just in time for summer – pop in to try our Char Siu pork chop with a Shaoxing wine sauce and Dorset clams. Fragrant and filling, it’s a dish that brings together the meat lover and seafood lover.

We start with a beautiful Tamworth pork loin chop, grilled and glazed to perfection with a Char Siu marinade – flavours of hoisin, red bean paste, oyster sauce and garlic. Meanwhile, Palourde clams from nearby Dorset are steamed open in our Shaoxing wine sauce, made from a house-made stock, shallots, garlic, wine and finished with butter. We plate it all with Shaoxing wine sauce, served nice and hot.

A hearty meal for one or large plate to share, enjoy the best of both worlds with this tasty dish. A smaller portion, without clams, is available on the set menu – a sample of the dish for even less.

A Summer-Style Negroni

For a refreshingly summery spin on a classic, pop in for our Flying Wedge. It’s perfect if you’re looking for something exciting to try, while still familiar enough for the Negroni-lover to enjoy. Just like a negroni, it’s got a spirit-forward flair, using London Dry Gin, Spanish Blanco Vermouth, and Sipello, a British aperitif with fun botanical flavours like gooseberry. But, the Flying Wedge also brings seasonal flavours to each sip, like zesty blood orange and herby tarragon. It’s a great way to start out your meal alongside some snacks, or perfect to sip at the bar with some company.
